I still think splinter cell chaos theory has the best stealth mechanics even to this day. Haven't touched it since release, but I can still remember the upside down hanging from pipes, the van Damme split between walls, the running, climbing, combat rolls, grabbing enemies from behind. Everything so damn good.
Really awesome multiplayer too.
